For Fellow Snackers

While in Cameroon, I was "encouraged" to learn some new ways to come up with homemade snacks. This recipe was one of my favorite discoveries! I've tweaked it a little myself to make it lower in saturated fat, but it you like you can add more butter or treats. I made them yesterday with just the basics, sliced almonds, and raisins (no coconut or craisins) and they got rave reviews by the whole family. Give it a try....it's easy, economical, healthy... and YUMMY! Enjoy!

Peanut Butter and Honey Granola Bars
3 1/4 c. rolled oats ("Quick oats" will work, but not as well)
1/2-1 c. chopped nuts (I usually use 1/2 c. sliced almonds)
3/4 c. honey
1/2-1 c. raisins or craisins (or 1/2 c. of each if you like fruity bars)
1/2 c. peanut butter
1 beaten egg
1 tsp. vanilla
1/2-1 c. shredded coconut (optional)
1/4 c. melted butter (*The more "extras" you add, the more butter you'll need to get it to stick together.)

1. Mix oats, coconut (if using), and nuts with melted butter. Spread on baking sheet and toast at 350 degrees for 20 minutes.

2. In a large bowl, mix the remaining ingredients together. Add toasted ingredients, and press into a lightly greased 9 x 13-in. pan (or glass Pyrex dish).

3. Bake for 20-22 minutes at 350 degrees. Cool slightly on wire rack. Cut into bars of desired size while still a little soft. Cool completely in pan before removing (or they'll crumble!).

Makes about 16-20 servings, depending on the size of your squares.
